why not wheat?

Sometimes we do things that aren't a good idea. Pardon my grammar. Like eating white sugar and white flour in a regular old chocolate cake. Just because. And you're tired of avoiding it all. Honestly, it's good to renew my convictions about food once in awhile, lest I forget why I do what I normally do and to remind myself why I don't do others anymore. It's not just because. And it has to be more than sometimes.

Sooo... in case you're wondering why it's not such a good idea (and so I have this handy-dandy reference), I now feel bloated and uhh, "windy". Ha.

Fermenting fun!

So, I've been in a mood!!! I've been using Serene's sauerkraut recipe to make pickled jalapenos, sauerkraut, and now I made a German recipe for marinated cold beet salad. I mixed some into yogurt for a gorgeous bowl of nutrition! Don't be intimidated- it's quite simple :)

Chocolate chip peppermint "ice cream"

This is definitely a crossover, if even that works ;) But, it's good for you and looks right...

One sliced frozen banana
One oz chocolate
1/2 avocado
Peppermint extract

Combine all ingredients in a food processor/blender. Top with coconut oil!
*Don't use too much salt or stevia, or you'll be sorry :)

Lemon Mousse... with coconut oil!

As you may recall, I'm trying to cut out dairy here for awhile. It forces me to get more creative in my culinary creations! For example, today when making the THM lemon mousse, I used a couple tablespoons of coconut oil as a sub for the coconut milk/Greek yogurt. Although it wasn't a fuel pull, it is good and super thick! I also cultured some jalapenos... what are y'all whipping up these days?

Adjusting for allergens

My little one has had eczema for awhile :( After talking to my sister, an RN, and researching, I decided to cut out dairy for a time to see if the condition got any better. To my surprise, I didn't see an immediate improvement in my child, but in myself! I've dealt with various gut issues for years, and I'm much more, ahem, normal now. My biggest question is whether or not raw dairy would be fine for me, and my LO. (Is that an abbreviation? I'm not quite with it when it comes to all the shortcuts in the blogosphere ;P)

Anyway, for now I'll remain completely dairy-free for two weeks, keep monitoring myself and LO- whose eczema does seem to be lessening- and see how it goes! Miss my yogurt!!!

One of my biggest challenges lately has been staying faithful on THM... if I don't eat enough protein, I so easily snack like crazy and gain weight again! I've buckled down again and things are going well. I'm not sure I tolerate Blue Diamond almondmilk very well because my stomach went crazy after I had had a choco pudding this afternoon.

While I did work out pretty well for awhile, I haven't been lately due to joint stiffness/fatigue all over. If anyone has an idea what this might be, please share your thoughts!!! I'm wondering if it's general inflammation due to leaky gut.

How're y'all doing? Oh, and the pic is of cream cheese cauliflower with yard sausage... the color comes from turmeric. I was craving mac 'n cheese with sausage, so I subbed cauli. The textures and taste was different, but Hubby loved it so I was happy!

Just keep plugging away...

I want to say something. You can do it. You can lose weight, get fit and eat healthy (barring rare circumstances, that is!) when you choose right. It's not usually the "fun" choice at the time, but oh, how it pays off!

Tuesday night, a gal pal and I got together to watch a rather lame chick flick and I volunteered to bring whatever snack she chose. Chocolate was her pick, so brownies I delivered. However, I made perfectly healthy THM cheesecake for hubby (you gotta treat your babysitter ;) ) and me. I totally love popcorn with movies, but thankfully we were out of it! I could've cheered the following morning when I weighed myself and saw a loss! Crazy :)

This morning, I did a great glutes workout- courtesy of my bestie and cousin!- and wanted to get my protein pancakes in right afterwards. But, my little one had other ideas so it ended up being later and I spent the morning pretty ravenous. Now we're having a bit of a rough afternoon with multiple spit-ups, poop, and changes, with my family coming tonight :) But I'm ok because I feel good knowing I've been taking care of myself! Yes, the house takes a hit, but in twenty years, what's more important?

Make good choices. They DO add up!

Aztec Sausage Skillet

4 Onions
8 cloves Garlic
1 lb. Pork sausage
2 dried red chilis
1 tbsp. each cumin, black pepper, salt, oregano
3 cloves
5 tomatoes
4 jalapenos
8 oz. spinach
Jar of guacamole seasoning
Cocoa powder
Yogurt or sour cream

Fry a generous amount of lard with sliced onions till golden. Add crushed & diced garlic along with sausage. After a bit, throw in chilies, spices, and rest of sliced/chopped veggies. This is also when I added some frozen quinoa to mine. Cook through.
Garnish as desired with yogurt or sour cream. I ate mine with a spoon of extra dark cocoa powder... yummy!

I don't need to lose weight!

I did a very healthy thing today... took some measurements while going through the book Protein Power and found out my 'ideal' weight. And I found out that I'm smack in the middle of that range. Whaddya know? Apparently I don't need to lose weight at all... hello, plateau... but merely burn some of the fat and build more muscle. This did wonders for my self image!!!

If it weren't for YOU...

... I wouldn't have come back. By now, you might be wondering if I gained so much weight back that I've been avoiding y'all, or thinking I flat gave out. Actually, I've been reading. A lot. And much of it to do with going grain-free. So, I tried it, and wow... seriously felt pretty good. I also got very tired of eggs like every morning, and did experience what was probably carb flu. (Withdrawal, ha!) Anyway, I'm not 100% on my game plan from here on out... should I do grains and do complete Trim Healthy Mama or go sans beans, grains, and legumes? I would LOVE to hear all your thoughts!!! Oh, and I pretty much maintained weight at 138 during this whole time (except Christmas. Ahem.) I'm not sure if I put on muscle while losing fat? Maybe.
